Neve's Leek and Potato Soup

I remember the days when leek and potato soup was the only school dinner that I actually used to like. In fact, it was probably the best thing about school! So this week, I thought I'd share my recreation of the only school dinner I used to enjoy as proof that they weren't all that bad.

A bit of info before we start though: I make all of my soup recipes using a soup maker. Honestly, if you love soups as much as me (or even juices, it makes smoothies too!), it's definitely worth the investment. Among my family and friends, I have inspired a frenzy of soup maker owners and they all love them. Mine is Morphy Richards, it's very quick and the easiest gadget I have ever used. If you don't have a soup maker, no worries, just look up the method for a leek and potato soup recipe but use my ingredients.


Ingredients:


1 Large Leek

1 Large Onion

2 Cloves of Garlic

530g Potatoes

750ml Water

1 Tablespoon of Olive Oil

2 Vegetable OXO Cubes

Salt

Pepper

- Serves 4


My Method:


  1. Get your soup maker and pour in the olive oil, crush the oxo cubes and add A LOT (!!!) of salt and pepper (more pepper than salt). Leek and potato soup can be quite bland because of the ingredients, so the salt and pepper really do give it the flavour. However, if you're not a fan of spice (unlike me) then don't add too much pepper, wait until the soup is done and then add however much you like on top of your serving.

  2. Chop your leek into about 4cm rounds, onion in half and then slices, and garlic into about 4 slices per clove and put them inside the soup maker. You don't have to chop them small because the soup maker had a blender.

  3. Peel and weigh your potatoes, slicing them into quarters and then slices about 2cm thick, and add them to the soup maker.

  4. Measure the water and pour inside of the soup maker. Give everything a mix with a wooden spoon and set the soup maker to a smooth setting. Wait until ready and serve.

Having a soup maker has changed my life! During lockdown I was making soup every day. It's quick, easy, healthy, and great for vegetarians. I was struggling to find something to eat for lunch, and soup turned out to be the perfect dish to avoid eating meat, cheese and bread, and inspired my creativity. I love making my own soup, and knowing the exact ingredients that go into something is always helpful for someone with intolerances. Leek and potato has most certainly turned into a household favourite.

Easy to Make - Super!

Time Taken - About 15 mins to make, 21 in the soup maker

Taste - Amazing!
