Neve’s Salad

I’m not going to tell you how to make a salad. I think it’s one of the most straight forward things, but I sometimes find myself in need of some salad inspiration. So here’s what I put in mine to hopefully inspire you:
Ingredients:
Lettuce
Rocket
Mushrooms
1 Tablespoon of Soy Sauce
1 Tablespoon of Sesame Oil
Avocado
Olives
Tomatoes
Cucumber
Red Onion
Red Pepper
Olive Oil
Parmesan Cheese
Pepper
My Method:
Wash and cut the mushrooms into halves and then 4 slices per half. Cook in a frying pan for about 5 minutes with the sesame oil and soy sauce.
Cut the avocado, olives, tomatoes, cucumber, red onion and red pepper into your preferable size and place them in a bowl with the lettuce and rocket.
Spoon your mushrooms over the salad, drizzle some olive oil for dressing, grate a little parmesan cheese and grind over some pepper to serve.
I have salads all the time as a accompaniment and on their own like this one. They are really refreshing, especially in hot weather. You can add as much or as little as you like and tailor them to your own food preferences. Other things that I like to add to my salads are halloumi or feta cheese (I would limit it to one cheese per salad), spring onions, sweet potatoes, beetroot, black or red gapes, egg, beans, lentils and of course, any type of lettuce and dressing you like. Give them a go! I guarantee you will find one you like.
