Neve's Toasted Mushroom Sandwich

Since turning pescatarian, something I have missed is a good sandwich. Meat sandwiches are definitely off the cards and lately I've been trying to cut back on dairy so cheese is not an option either. Mushrooms have been a massive substitute in my diet in place of meat and sandwiches are no exception. So here's the recipe for my toasted mushroom sandwich, made with homemade bread (see my blog, 'Jamie Oliver's Homemade Bread Review' for the recipe):


Ingredients:


Crusty Bread (or Whichever Your Favoured Sandwich Bread is)

3 Chestnut Mushrooms

1/2 Red Onion

1 Tablespoon of Sesame Oil

1 Tablespoon of Soy Sauce

3-4 Cherry Tomatoes

Rocket

Butter (Optional)

-Serves 1


My Method:


  1. Wash and half the mushrooms, cutting the halves into about 4 slices each, then slice the red onion into 1/2cm thickness.

  2. Put the sesame oil and soy sauce in a frying pan on a low-medium heat and allow to warm for about 1 minute, then add the mushrooms and onion and cook for 5 minutes, stirring frequently.

  3. Meanwhile, slice the tomatoes lengthways and toast your bread however well done you like it.

  4. Butter the bread and spread your mushrooms and onions evenly across one slice. Place your tomatoes and some rocket on top to finish the sandwich.

This is a great sandwich alternative. I love the combination of sesame oil and soy sauce with mushrooms and use it quite frequently when making mushroom noodles. The subtle flavour makes it perfect for a sandwich, paired with tomatoes, red onion and rocket, this great tasting, fresh sandwich, suitable for vegetarians, is a definite winner!

Easy to Make - Yes!

Time Taken - 10-15 minutes

Taste - Great textures and tasty, subtle flavours
