Neve's Tzatziki

After consulting various tzatziki recipes and testing it out with and without some ingredients, I finally found the combination that I think is perfect. So here's my recipe:


Ingredients:


170g Greek Yogurt

1/2 Cucumber

1 Crushed Garlic Clove

A Large Handful of Mint

1 Teaspoon of Lemon Juice

A Splash of Olive Oil (Plus Extra For Garnishing)

Salt

Pepper

A Black Olive

-Serves 4


My Method:

  1. Grate the cucumber and drain out the juices in a sieve, pushing the grated cucumber against the sides to make sure that all of the juices are gone.

  2. Crush a garlic clove by finely dicing and then pressing against the side of a blade to make a paste.

  3. Chop the mint into very small pieces and add to a bowl with the yogurt, cucumber, garlic, lemon juice, olive oil and a pinch of salt and pepper. Mix well and serve with a little olive oil over the top and a black olive.

After tasting, I can tell you that it was delicious and the lemon and mint flavouring make the tzatziki 100% better than anything shop bought. I served mine with celery and crackers but you could use anything you want. I suggest carrot, pepper, crisps, flatbread or even asparagus. My version also included our very own homegrown cucumbers. It's great to find another use for them besides salad. Only 10 more left to eat (will we ever get through them?)!
