BOSH's Spaghetti Bolognese Review

So my last review of a recipe by BOSH wasn't very positive. In my opinion, their recipes can be quite tasteless and bland, but this Spaghetti Bolognese was onto a winner! Don't get me wrong, I don't think that it was perfect, but with a few improvements, it could be a great substitute for something that, no doubt, a lot of vegetarians miss.

Unlike some of BOSH's recipes, the ingredients in this weren't too far fetched. I had everything already and it was very easy to prepare. I followed this recipe exactly as it is written but quartered the ingredients as I was only making it for myself (I think that 1/4 was perfect for one person).

I also don't have a food processor so I used a food chopper. They really are a godsend and chop everything to the perfect size for this dish. The upside is that you control it yourself, so can decide the exact size of the veg.

I think that the substitution of mincemeat for mushrooms was genius! Mushrooms have got to be my favourite veg and they were delicious when cooked like the recipe says (yes, I tried a little. I couldn't help it!). Using red onions instead of white also added extra flavour to the dish. It was a nice addition, one that I'll probably use again in the future.

There was definitely flavour in this recipe, the amount of red wine ensured that! The wine did slightly overpower the other flavours but made certain that veg wasn't the only taste from this meal.

The only issue I really had was that it was quite dry, you can tell that by just looking at the picture. Gone was the Bolognese sauce and the texture was more along the lines of a paste. I think that if I made this again, I would probably add some whole tomatoes and chop them quite small, but not as small of the rest of the veg. This would make it more like the Bolognese I know and love, and perhaps not as much red wine would be needed with the addition of tomatoes.

Overall:

Easy to Make - Very! Make sure to prepare EVERYTHING first though so you don't panic half way through (or maybe that's just me!)

Time taken - Around one hour, so not really that bad when it comes to making a freshly cooked meal

Taste - Lovely! I really did eat every last bit. A little dry, but I'm sure that adding some tomatoes would provide a quick fix. Serve with lots of pepper and basil
